Gifted!

What’s better than coming home to find a box of homemade cookies at your door? Nothing, absolutely nothing. My prize cookies from Celine arrived today! Exquisite White Chocolate Lime Cookies. Not a one broken or melted. Slightly crisp with a hint of lime flavor and not too many white chocolate chips to make them overly sweet. These are perfection. And you know what makes them extra special? I was bold and asked her to make them wheat and soy free. Heck, I wanted to be able to enjoy more than just a bite of these treats! She promised she would bake them as I requested. I have enjoyed two tonight so far.

Okay, I followed the links to Celine's recipe -- I was expecting gluten-free, but she said she used spelt. Oh, well. This is the second time I have been fooled by her in expecting a gf recipe and finding gluten, but her recipes look so good I will experiment with some gf flours myself. I am glad (and envious) you could enjoy them with spelt!

yay! so glad they made it in one piece, and that they are liked. I'm also relieved to see they've not taken 2 weeks to get to you the way my friends' cookies are.

Michele, D. specifically listed the ingredients she could have, so I just followed her instructions. these aren't claimed to be entirely GF.

Michele, Celine does bake with rice flours too. Do experiment with her recipes. Did you see my glutenfree cake in the post below?
